Mission Impossible

Remember way back when, when I told you B and I hadn’t eaten out much and we were eating so much healthier?  Yeah, that was funny.

Obviously, based on last weeks posts, we didn’t stick to that plan.  We have a new plan now, a much shorter, easier to achieve plan.

Two weeks, no take out, no restaurants, no spending money on food (unless it is a quick grocery store trip to pick up a missing ingredient).

Last night we spent a large amount of money at the grocery store.  I have a whole menu planned for two weeks.  I have breakfast items, things to pack for lunch and dinners!  Dinners are the hard part.  With all the house work we have been doing lately, cooking dinner has just seemed like an exhausting feat, one we gave up on quickly.

The benefits of this mission impossible, a bigger bank account and a smaller waistline.

Oh yeah, it’s healthy food for two weeks.  No mac and cheese in my pantry.  Fresh fruit and vegetable galore!

So far, success.  But, I am only half way through the first day.  I am looking forward to tonight’s dinner.  We are making whole wheat mini pizzas with tomato, basil and mozzarella.  Yum!

I hope posting this doesn’t back fire on me.  I really don’t want to admit defeat in two days.  Wish us luck and don’t call us for dinner for two weeks!

    I’ll share some recipes with you. Quick and easy, healthy crock pot recipes. I’ve been doing Jenny Craig and have lost 40 pounds and still going. I have a great crock pot shrimp creole recipe!!!! yum (if you like shrimp)

    Mini goals is the key. I started WW again last week. I pretty much want to jump out my 2nd story window every day. I mean, I am already healthier! I have a good slow cooker beef fajita recipe that I tried and it is fabulous. Dani-I want that shrimp recipe.

    Crock Pot Shrimp Creole
    * 1 1/2 c diced celery
    * 1 cup chopped onion
    * 3/4 cup chopped bell pepper
    * 1 can (8 ounces) tomato sauce
    * 1 large can (28 oz) whole tomatoes
    * 1 clove garlic, minced
    * 1 teaspoon salt
    * 1/4 teaspoon pepper
    * 4 to 6 drops Tabasco sauce, or a dash or two of ground cayenne, to taste
    * 1 to 1 1/2 pounds medium shrimp, deveined and shelled

    PREPARATION:
    Combine all ingredients in slow cooker except shrimp. Cook 3 to 4 hours on high or 6 to 8 hours on low. Add shrimp last hour of cooking. Serve over hot boiled rice.

    Good for you! I wish I could say the same thing. Since I’ve had child #2, my diet has consisted largely of ice-cream and potato chips. Okay, so I’m exaggerating (well, a little), but my belly is the best evidence that I really should buck up and get back to my normally healthy ways. Sigh.

    You know what makes it easier (but is not as quick of a fix)? When I gained the Freshman 20 (oh yeah…I did), what really helped me was making small, healthier changes that ended up becoming habits. For example, I totally switched over to ordering wheat bread, pasta, tortillas, etc. and now I don’t even like white bread. I also realized I liked iced tea, so I became a tea-aholic as opposed to drinking soft drinks (it was just all about getting out of the habit of ordering them). Now I don’t miss them at all and I find them disgusting. I started allowing myself a hamburger, but I compromised by getting veggies as a side. All of those things just became second nature, but I was still able to eat the things I liked. And cooking is great because you can substitute things and use healthier ingredients and you control the quality of them. As time went by, the pounds started coming off. But it took some time for my body to adjust to the changes and realize that it was healthier.
